Lemon and mustard chicken thighs

Background
This a super-easy and tasty recipe for a midweek family meal. Serve it with mashed potato and a green salad.
Ingredients
- 6 chicken thighs
- 1 Tbsp mustard
- 2 tsp olive oil
- 2 tsp chopped thyme or rosemary
- 1 lemon - zest and juice
- 2 cloves garlic - minced/crushed
- Salt & pepper
Instructions
- Mix the mustard, oil , garlic, herb, lemon zest & juice together.
- Put the chicken in a large bowl and pour over the marinade. Rub the mixture into the chicken pieces, making sure they are well covered.
- Rest for at least half an hour or, if you can, marinate it in the fridge overnight.
- Preheat the oven to 190°C.
- Put the chicken and the marinade into an oven-proof dish, then season with salt and pepper.
- Roast in the oven for about 45 minutes until golden and cooked through.
Tips
Make use of the other shelf in the hot oven to make some side dishes such as roasted vegetables, crushed potatoes etc.© 2026 Copyright CookTogether
