Lentil and kale saute

Background
This lentil and kale sauté has an Asian twist to it which not only makes the dish delicious and interesting but healthy too. You can serve it onΒ a piece of toast or with rice. Alternatively, serve it as a side dish with grilled salmon or pork.
Ingredients
- 1 cup cooked or 1 tin brown lentils, drained
- 1 shallot
- 1 cup sliced curly kale
- 1 Tbsp vegetable oil
- 1 Tbsp soy sauce
- 1 Tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp sesame seeds
- 4 radishes, chopped
Instructions
- Thinly slice the onion and garlic.
- Heat the oil in a frying pan and gently sweat the onion and garlic until soft.
- Wash the kale and add it to the pan. Add the soy sauce, vinegar and a drop of water.
- Put a lid on and steam for about 5 minutes or until the kale has wilted.
- Turn off the heat, stir in the sesame oil, then the radish slices.
- Serve with sesame seeds scattered on top.
