Background

This lentil and kale sauté has an Asian twist to it which not only makes the dish delicious and interesting but healthy too. You can serve it on a piece of toast or with rice. Alternatively, serve it as a side dish with grilled salmon or pork.

Ingredients

1 cup cooked or 1 tin brown lentils, drained
1 shallot
1 cup sliced curly kale
1 Tbsp vegetable oil
1 Tbsp soy sauce
1 Tbsp rice vinegar
1 tsp sesame oil
1 tsp sesame seeds
4 radishes, chopped

Instructions

Thinly slice the onion and garlic.
Heat the oil in a frying pan and gently sweat the onion and garlic until soft.
Wash the kale and add it to the pan. Add the soy sauce, vinegar and a drop of water.
Put a lid on and steam for about 5 minutes or until the kale has wilted.
Turn off the heat, stir in the sesame oil, then the radish slices.
Serve with sesame seeds scattered on top.
