Lettuce and Pea Soup

Background
At the end of the day at my local market they were almost giving away lovely lettuces. Having eaten enough salads recently to grow ears like Bugs Bunny, I thought I'd give this Lettuce and Pea Soup a go. It turned out to be remarkably satisfying, tasty and healthy!
Ingredients
- 3 Tbsp olive oil
- 2 medium onions
- 4 garlic cloves
- 400g lettuce
- 450g frozen peas
- 1Β½ litre vegetable stock
- Handful fresh mint leaves
- Β½ tsp sugar
- Seasoning
Instructions
- Heat the oil in a large pan over a medium heat. Peal and slice the onions and garlic, then stir for a couple of minutes in the oil to soften.
- Meanwhile, roughly chop up the lettuce and wash thoroughly before adding to the pan.
- When the lettuce has wilted a bit, add the other ingredients and season to taste.
- Bring to the boil, then simmer for about 10 minutes, stirring occasionally.
- Serve with fresh, chunky bread.
Tips
