Low-cal fennel and broccoli soup

Background
This low-cal fennel and broccoli soup is perfect for those who are on a diet. It’s low-carb, vegan and healthy too, so it’s worth making it even if you don’t need to be worried about your weight. Serve it with flat bread or healthy crackers.
Ingredients
- 2 cloves of garlic
- 1 stick celery
- 1 fennel bulb
- 1 broccoli
- 1 tsp caraway seeds
- 500 ml vegetable Stock
- Apple cider Vinegar
Instructions
- Chop the fennel, garlic, celery and broccoli.
- Heat a little oil in a saucepan and fry the garlic and celery for a couple of minutes.
- Add the chopped vegetables and caraway seeds and sauté for 5 minutes over low heat.
- Add the sock, bring to the boil and gently simmer for 10-15 minutes, until tender. Turn off the heat.
- Using a stick blender, whiz until you get a silky soup.
- Serve with a spoonful of apple cider vinegar.
