Low-carb almond cookies

Background
You can make these low-carb almond cookies in just 15 minutes. They are not only low-carb but low-sugar, gluten-free and dairy-free too! Perfect for various diets. The cookies go really well with a cup of coffee or tea and ideal for picnics & snacks. Also, they make a good base for cheesecakes, trifles and other desserts. You can make them vegan too, by using flax egg (1 tbsp ground flaxseed mixed with 3 tbsp warm water).
Ingredients
- 2 cups ground almonds
- 1 tsp ground cinnamon
- Β½ tsp ground nutmeg
- β cup Stevia (or 2 tbsp honey or agave syrup)
- Β½ tsp vanilla essence
- 1 egg, whisked
- 1 handful almond flakes
- 1 tsp baking powder
Instructions
- Preheat the oven to 165 C degrees.
- Mix the dry and wet ingredients in a separate bowls, then gently combine them.
- Shape the dough into equal sized balls (about 16) then place them on a baking sheet, lined with baking paper. Press the tops slightly with the base of a spoon.
- Bake for 10-12 minutes until lightly browned, then transfer them onto a write rack to cool.
Tips
You can scatter some almond flakes on top the cookies just before baking!Categories
