LowCal Broccoli and Cauliflower Soup

Background
For a really quick, satisfying and tasty lunch thisΒ LowCal Broccoli and Cauliflower Soup is just the thing! It's so simple, yet delicious and perfect for the diet conscious as each portion is only about 75 kCal. Allow about 25 minutes simmering (stirring frequently) if not using a pressure cooker.
Ingredients
- 7 squirts of oil spray (7 kCal)
- 120g Onions (42 kCal)
- 300g Broccoli (99 kCal)
- 300g Cauliflower (90 kCal)
- ΒΎ litre Vegetable Stock (35 kCal)
Instructions
- Put the pressure cooker pan over a low heat and squirt in the oil.
- Add the onion and stir for a couple of minutes to soften.
- Add in the broccoli and cauliflower, then the stock and seasoning.
- Bring to the boil, stirring well.
- Cook under pressure for 8 minutes and cool with water (as per maker's instructions).
- Serve sprinkled with a little more ground pepper to taste.
Tips
- For an easy vegetable stock I use 1 Kallo veg cube in ¾ litre boiling water
- For a little more zing, try adding a couple of teaspoons of organic cider vinegar to your serving.
