Mandarin baked spiced figs

Background
These vegan mandarin baked spiced figs are delicate and really tasty. This dish is a lovely dessert served with custard, ice cream, or yogurt (which can be plant-based too). Alternatively serve it as topping with porridge, pancakes and waffles, or you can use it in trifles and fruit fools.
Ingredients
- 4 figs
- 1 mandarin
- Β½ tsp cinnamon
- Β½ tsp ginger powder
- 1 handful walnuts (broken into small pieces)
- 2 Tbsp Agave syrup or maple syrup
- Mint leaves to garnish
Instructions
- Cut the figs in half or into wedges. Put them in a small baking dish, cut-side facing upwards.
- Cut the mandarin in half, and squeeze the juice into a small bowl.
- Tuck the mandarin halves between the figs. Scatter the walnuts on top.
- Add the cinnamon, syrup and spices to the mandarin juice, combine well, then drizzle this over the figs (or brush the figs with the mixture).
- Put the dish in a preheated oven and bake (at about 180C degrees) for about 10-15 minutes, until tender.
- Serve warm or at room temperature, garnished with baby mint leaves.
