Background
For this mango waffles recipe I used tinned mango slices in syrup, so the waffles are super easy to make. Also, you can use plant-based milk and egg substitute for dairy-free, egg-free or vegan versions.Β These waffles are not just for breakfast, you can serve them with ice-cream or custard as a dessert too.
Ingredients
- 1.5 cup flour
- 1 tsp baking powder
- 1 tsp vanilla essence
- 2 medium eggs
- 1 tin mango in light syrup
- Β½ cup milk (plant-based, if needed)
- 2 Tbsp oil
- Honey, lime juice
Instructions
- Put the flour, eggs, baking powder and vanilla essence in a blender. Pulse for a few seconds, then add half of the mango slices, oil and a some of the syrup from the tin. Pulse again. Add enough milk to have a thick, but pourable batter.
- Heat the waffle maker. Once itβs hot, spoon in the batter and seal. Follow the machine instructions to cook the waffles - they should be golden brown and crispy on the outside, soft inside. You should be able to get 3 or 4 waffles from the mixture (depending on the size of your machine).
- Meanwhile, put the remaining mango slices and syrup to a small pot. Bring to the boil and cook until you get a thick syrup around the fruit pieces. Add some honey and a drop of lime juice.
- Serve the waffles with the mango compote.
