Mediterranean grilled pepper and artichoke salad

Background
It’s useful to have a some jarred grilled veggies in the pantry, in case friends drop in for a drink, or you want some tapas/anti-pasti before dinner. This Mediterranean grilled pepper and artichoke salad is super easy to make, ready in just 5 minutes - you can serve it on toast, crostini, or in flatbread (for an easy lunch).
Ingredients
- ½ jar grilled artichoke (about 4 heads)
- 2 grilled/barbecued peppers (home-made or from jar)
- 6 sun-blushed tomatoes
- ½ cup black or green olives pitted
- For the dressing:
- 2 Tbsp. olive oil
- Juice of ½ lemon
- 1 garlic, crashed
- 1 tsp Italian herbs or dried oregano
- Salt and pepper
Instructions
- Drain the grilled veggies and sun-blushed tomatoes from the jars and cut them into chunks or slice them thinly. Mix them in a bowl together with the olives.
- Add the oil, herbs and lemon juice. You can use the oil from the jars, if preferred - but sometimes it tastes a bit weird, so do try it first!
- Toss well, then season to taste. Toss again.
- Let it rest for a few minutes, then serve.
