Background
Medu vada is an Indian fritter made from black lentils. It is usually made in doughnut shape with a crispy exterior and soft interior. This is a popular breakfast dish in the south of India. This is everyone's favorite at home and I make them during Indian festivals too.
Ingredients
- 1 cup black lentils (without husk)
- 2 Tbsp rice flour
- 2-3 green chillies finely chopped
- 1 inch ginger finely chopped
- Chopped coriander leaves
- Oil to deep fry
- Salt to taste
Instructions
- Wash and soak the black lentils in 4 cups water for 2 hours.
- Drain all the water and grind to a smooth paste using very little water. Add salt while grinding. The batter should be thick.
- Add coriander leaves, green chillies, ginger, rice flour and mix well.
- Heat oil in a deep bottomed pan on a medium flame. Wet your palm and take a lemon sized batter.
- Gently pat the batter and make hole in the center.
- Gently slide shaped batter into the hot oil. Make sure that the oil is not too hot. Otherwise the vada will not cook evenly.
- Fry on both sides till it becomes golden brown color.
- Serve hot with chutney and sambar, or pickle.
Tips
The right consistency is very important otherwise you will not be able to make the correct shape. Also be careful while adding the batter to the oil.© 2026 Copyright CookTogether
