Mince pie puff stars

Background
These mince pie puff stars are perfect for Christmas parties or afternoon tea. I used home-made mincemeat, but any, good quality, mincemeat works.(Mincemeat recipes>>) For a vegan version, use water instead of egg to stick the stars together, and for a gluten-free version use appropriate puff pastry.
Ingredients
- 1 sheet ready-rolled puff pastry (can be gluten-free)
- 1 egg yolk, beaten (or water)
- Good quality mincemeat
Instructions
- Preheat the oven to 180°C. Line a baking sheet with parchment paper.
- Unroll the pastry and stamp out 12 large stars shapes, using cookie cutters. Put half of them onto the baking sheet. Drop a small spoonful of mincemeat onto the middle of the trees, then gently spread them out a bit – but not reaching the edges. Brush the edges of the stars with the egg or water.
- Using a sharp cut small lines from the middle towards the points of the remaining star (these will allow the steam to escape). Put these on top of the filled stars, gently pressing together their edges.
- Brush the tops with egg, if you want them to be shiny looking.
- Bake for 10-15 minutes until golden.
- Let them cool on a wire-rack, then dust them with icing sugar.
- Serve lukewarm.
