Mini Chorizo and cheese scones
Background
These mini Chorizo and cheese scones are perfect for parties, picnics, trips, or just for snacking during the day. If you don’t have yoghurt or kefir, just use milk! The flour can be substituted with gluten-free mixed flour, if wheat is an issue for you. These scones are yummy cold or warm!
Ingredients
- 125g self-raising flour
- 25g butter
- 50g matured cheddar
- 50g chorizo sausage
- 100ml kefir or buttermilk
Instructions
- Preheat oven to 200°C. Line a baking tray with baking paper.
- Chop the chorizo into tiny cubes and grate the cheese.
- Sift the flour into a large bowl, then rub in the butter until it looks like fine breadcrumbs. Add the cheese and chorizo, gently combine. Stir in the kefir or buttermilk, then mix with a blunt knife until you get a soft dough.
- Tip the dough onto lightly floured surface and gently knead until smooth. Flatten it to to 2-3cm thick and cut out rounds with a small cookie cutter. Repeat until the dough is used up.
- Place the scones on the baking tray, brush the tops with milk and scatter some grated cheese over them if you like.
- Bake in the oven for 10-15 minutes until risen and golden.
- Cool them on a wire rack before serving.
