Mushroom, Courgette & Mangetout Stir Fry

Background
I needed to make something quick and easy for lunch the other day. The first things I found in the fridge were the basics for what became this Mushroom, Courgette & Mangetout Stir Fry. It turned out to be exactly what we needed – a really simple but delicious meal ready to eat in no time!
Ingredients
- 2 Tbsp sunflower oil
- 1 red onion
- 3 cloves garlic
- 250g mushrooms
- 1 or 2 courgettes
- 1 large red pepper (capsicum)
- 1 or 2 tsp Curry powder (to taste)
- ½ Cup vegetable stock
- Garnish: Fresh herbs (e.g. coriander)
Instructions
- Roughly chop the vegetables.
- Heat the oil in a wok (or other large pan) and stir fry the onion & garlic for a minute.
- Add the mushrooms and allow them to sweat for another minute before adding the other vegetables and continuing to stir for another couple of minutes until tender.
- Mix in the curry powder before pouring in the stock.
- Continue to heat, gently stir for another minute then garnish and serve with fresh bread.
