Background
These mustard lentils are super easy to make and very versatile to use. Β They go well with grilled/barbecues sausages, fried pork chops Β & steak or grilled fish. I sometimes add roastedΒ veggies or chopped gherkins to make it more interesting.
Ingredients
- 250g brown lentils
- 1 celery stalk
- 1 clove garlic
- 2 Tbsp mustard
- 2 Tbsp olive oil
- Juice of Β½ lemon
- Salt and pepper
Instructions
- Rinse the lentils under water then put it into a pan of cold water. Add the garlic and the celery.
- Bring it to the boil, then simmer for about 25-30 minutes.
- Discard the garlic and celery, and drain the lentils. Transfer the lentils to a serving dish.
- Add the mustard, lemon juice, olive oil, and season with pepper and salt.
- Serve at room temperature.
Tips
Use any leftover for healthy salads. For example, add a cup of steamed rice or pearl barley, chopped spring onions, chopped grilled pepper, and 1 Tbsp of fresh chopped herbs.© 2024 Copyright CookTogether
