New potatoes with mustard and spinach
Background
These new potatoes with mustard & spinach go really well with grilled pork chops or steak. You can pre-cook the potatoes and warm through in the spinach sauce, so this recipe is ideal for summer parties and barbecues.
Ingredients
- 450g new potatoes
- 2 cloves of garlic
- 1 Tbsp olive oil
- 100g baby spinach
- 2 Tbsp Dijon mustard
- Juice of ½ lemon
Instructions
- Put the potatoes in a pan of cold water, bring to the boil and cook for 15 minutes or until tender. Drain and rest until needed.
- Finely slice the garlic.
- Heat the oil a pan, add fry the garlic for 30 seconds, then add spinach, lemon juice and mustard. Add a drop of water or vegetable stock too.
- Put the lid on and cook for 3 minutes or until the spinach has wilted.
- Cut the potatoes in half, then add them to the spinach sauce. Season with salt and pepper.
- Toss gently to warm through, then serve.
