Ingredients
- 150g biscuits (cookies) of your choice
- 50g melted butter
- 100g good quality chocolate
- 250g cream cheese
- 100 ml double cream
- 50g light brown sugar (or honey, agave syrup)
- Optional: 150g seasonal fruit
Instructions
- Crush the biscuits into fine crumbs using a food processor, then mix with the melted butter.
- Divide the mixture into small serving dishes or moulds, about 1 cm thick, and press it down evenly with a spoon.
- Melt the chocolate over a double boiler or in the microwave.
- In a bowl, mix the cream cheese with the heavy cream and sugar until smooth. If using fruit, gently fold it into the mixture.
- Spoon the cream cheese filling over the biscuit base, then pour the slightly cooled melted chocolate on top.
- Refrigerate for at least 2 hours before serving.
