Pani Puri (Golgappas)

Background
Pani puri is a famous street food in India. Pani means water, which is sour, tangy as well as spicy and puri means fried puffed up dough balls (found mostly in all Indian stores). The puris generally are stuffed with potato stuffing (although this stuffing varies from person to person's choice) and the pani and eaten.
Ingredients
- For stuffing:
- 2 Medium potatoes, boiled and cubed
- 1 Small onion, chopped
- 1 Tbsp Coriander leaves, chopped
- 1 tsp Roasted cumin powder
- 1 tsp Chaat powder (Store bought)
- ¼ tsp Red chilli powder
- Black salt or salt, as required
- For Pani:
- ½ Cup Mint leaves, chopped
- ¾ Cup Coriander leaves, chopped
- 1" Ginger, chopped
- 1 Green chilli, chopped
- 1 Tbsp Seedless tamarind
- 3 to 3.5 Tbsp Crumbled or powdered jaggery/sugar
- 1 tsp Roasted cumin powder
- 1 tsp Chaat masala powder
- 2 to 3 Cups of water (add water as per the consistency you want)
- Black salt or salt, as required
- For puris:
- 30 Puris (Store bought)
Instructions
- For the stuffing, mix all the ingredients under stuffing in a bowl and set aside.
- For the pani, grind all the ingredients under pani except for water and salt to a smooth paste.
- Add salt and water to the above smooth paste and make it to a thin consistency. Set this water aside in a bowl.
- Crack the top of the puri with a spoon.
- Add 2 to 3 tsp of the boiled potato-onion filling in the puri.
- Stir the pani and add it to the puri with stuffing and consume immediately.
- Repeat the process for all the puris.
