Healthy blueberry breakfast bar
Background
This healthy blueberry breakfast bar goes well with your morning tea or coffee, or munch on it during the day. It’s vegan, sugar-free, oil-free - yet high in fibre, protein and omega fats, so it keeps you full for longer. For a gluten-free version use appropriate oats.
Ingredients
- 1 cup rolled oats
- 1 large, ripe banana
- 1 Tbsp ground flax seeds
- ½ cup chopped walnuts
- ½ cup chopped dates, figs and prunes
- 1 tsp cinnamon powder (Ceylon)
- ½ tsp ground ginger, optional
- 1 tsp vanilla extract
- ½ cup soy, oat or almond milk
- ½ cup fresh blueberries
Instructions
- Put the banana in a mixing bowl and mash it with a fork.
- Add the remaining ingredients and combine well. If the mixture is too thick, add more milk.
- Transfer the mixture into a shallow baking tin, lined with parchment paper, or silicon mould.
- Bake in a preheated oven, set to 190C, for 20-25 minutes.
- Alternatively, put the tray in the air-fryer and set it to bake for approx. 15-20 minutes.
- Let it cool, then cut it into slices and serve.
