Paprika garlic bread
Background
I don’t understand why people buy frozen or ready-to-cook garlic bread. It’s so easy to make your own! Not only are you able to create your own special spiced butter but you can use up stale bread that otherwise would end up in the trash. I normally make garlic bread from leftover baguette and ciabatta, but you can use up country loaves, sourdough loaves, panini and other bread rolls etc. This paprika garlic bread is just an example - you can add other spices or pastes to the butter (chipotle, pesto, curry etc). For a vegan version use dairy-free spread; for a gluten-free version use appropriate bread.
Ingredients
- 2 stale bread rolls, ciabatta buns or 1 small baguette
- 2 Tbsp soft butter or dairy-free spread
- ½ tsp smoked paprika
- ½ tsp dried herbs (marjoram, oregano) or 1tsp chopped fresh rosemary or thyme
- 2 small cloves of garlic, minced
- Pinch of salt
- Pinch of cayenne (optional)
- Freshly ground pepper
Instructions
- Cut the bread, rolls, buns in half (horizontally). If they are fresh, leave them like this for an hour or so.
- Preheat the grill in your oven.
- Mix the butter or dairy-free spread with the paprika and herbs. Add the garlic, season with salt and pepper and mix well.
- Spread the spiced butter all over the bread.
- Put the slices on a baking sheet and grill (or bake) until the top is golden. If you’re grilling then - be careful they can turn charred easily. So check every 30 seconds.
- Serve warm or at room temperature with soups and stews.
