
Background
For summer parties, treats and light puddings this peach and cherry yoghurt fool is a perfect choice. Also, it can be made in just 5 minutes, so it's perfect for an instant snack! For adults, use Amaretto liqueur; for a non-alcoholic version use cherry or cranberry juice. For a dairy-free version, use soya yoghurt such as the Alpro cherry & blueberry yogurt.
Ingredients
- 2 peaches
- 1 tub cherry yoghurt
- 2 crunchy Amaretti biscuits
- 2 Tbsp Amaretto liqueur or cherry juice
- 6-8 fresh cherries
Instructions
- Crush the Amaretti biscuits with a rolling pin between two sheets of kitchen towels. Transfer the crumble into a small dish.
- Peel and thinly slice the peaches, then layer them in the base of two glass tumblers or ramekins. Scatter half of the biscuits on top, then pour over half of the Amaretto liqueur or juice.
- Halve the cherries and discard their pits. Put them in a small bowl and pour over the remaining liqueur (if used). Chill.
- Lightly whisk the youghurt until fluffy and spoon over the peaches. Chill until serving.
- Serve with the cherry halves arranged on top, pour over their marinade then dust with the remaining Amaretti crumble.
- Serve. You can decorate them further with some toasted almonds and/or a couple of mint leaves, if you like.
