Phirni (Creamy rice pudding)

Background
Phirni is a classic rice based pudding made with full cream milk, rice and sugar. This is a very popular North Indian dessert, prepared on festive occasions. Traditionally Phirni is always cooked over low heat so that the milk thickens resulting in rich and creamy dessert.
Ingredients
- 1 liter Milk
- ΒΎ cup Sugar
- Β½ cup Rice
- Β½ tsp Green cardamom powder
- 1 Tbsp Chopped mixed nuts (I used almonds and pistachios)
Instructions
- Wash and soak rice in water for half an hour.
- Grind the soaked rice into a coarse paste by adding half a cup of water. Keep aside.
- Boil the milk in a thick and deep bottomed vessel. Reduce the heat to a medium flame and keep stirring till the milk is reduced to ΒΎth of its original volume.
- Add sugar and adjust the amount of sugar according to your taste.
- Once the sugar is dissolved add the ground rice paste to the milk. Keep stirring until the milk starts to thicken.
- If you have missed the creamy consistency the Phirni will be very thick, add few table spoons of milk to get the right consistency before pouring into serving bowl.
- When the pudding is ready turn off the heat. Stir it every now and then to prevent the formation of thick layer on the top.
- Once the Phirni has cooled down, add cardamom powder.
- Garnish the yummy desert with chopped nuts. The pudding can be served either hot or at room temperature.
