Background
ThisΒ simple pickled cucumber salsa is a wonderful condiment that's great with burgers and sandwiches, or grilled/barbecued meat & fish. Also it fits well on a buffet table at a party or take it with you in a jar to picnics and trips. Stored in a jar, in the fridge it keeps well for many days even weeks!
Ingredients
- 3 pickled cucumbers (gherkins)
- ½ fresh cucumber
- 1 Tbsp freshly squeezed lemon juice
- 1 tsp unrefined sugar
- 1 Tbsp chopped dill
- 1 Tbsp olive oil
Instructions
- Drain, then chop the gherkins into small cubes. Cut the cucumber in half lengthwise, scrape out the seeds with a spoon, then finely chop.
- Mix the cucumber and gherkin cubes together in a serving bowl. Add the lemon juice, dill, sugar and oil. Toss everything together. Season to taste.
- Keep chilled until you need it.
