Pistachios cupcakes with orange & honey

Background
These lovely, soft pistachios cupcakes with orange & honey are ideal snacks with tea & coffee. They would also make a lovely dessert at the end of a Middle-eastern style lunch or dinner.
Ingredients
- 80g butter or dairy-free margarine
- 2 eggs
- 30g unrefined sugar
- 3 Tbsp honey
- 80g flour
- 50g pistachios
- Grated zest of 1 orange
- To serve: honey, Greek yogurt
Instructions
- Preheat the oven to 190Β°C.
- Chop the pistachios roughly.
- Melt the butter, let it cool.
- In a mixing bowl, using an electric whisk, beat the the eggs with the sugar and honey until you get a thick, syrupy glaze. Sift the flour on top, fold in gently. Add the orange zest and most of the pistachios, then stir in the cooled melted butter.
- Spoon the batter into a greased muffin tin or silicone muffin cases.
- Bake for about 10-12 minutes until golden.
- Transfer them onto a wire rack to cool.
- Before serving, spoon some honey over the cupcakes and sprinkle the remaining pistachios on top.
- Serve with Greek yogurt.
