Pistachios cupcakes with orange & honey

Background

These lovely, soft pistachios cupcakes with orange & honey are ideal snacks with tea & coffee. They would also make a lovely dessert at the end of a Middle-eastern style lunch or dinner.

Ingredients

80g butter or dairy-free margarine
2 eggs
30g unrefined sugar
3 Tbsp honey
80g flour
50g pistachios
Grated zest of 1 orange
To serve: honey, Greek yogurt

Instructions

Preheat the oven to 190°C.
Chop the pistachios roughly.
Melt the butter, let it cool.
In a mixing bowl, using an electric whisk, beat the the eggs with the sugar and honey until you get a thick, syrupy glaze. Sift the flour on top, fold in gently. Add the orange zest and most of the pistachios, then stir in the cooled melted butter.
Spoon the batter into a greased muffin tin or silicone muffin cases.
Bake for about 10-12 minutes until golden.
Transfer them onto a wire rack to cool.
Before serving, spoon some honey over the cupcakes and sprinkle the remaining pistachios on top.
Serve with Greek yogurt.
