Roast Beef with Chipotle Beans
Background
This roast beef with chipotle beans brings Mexican-inspired flavours to a classic roast dinner. A small beef joint is cooked on top of a smoky, spicy bean stew, allowing the meat juices to enrich the sauce while the beans absorb the flavours of chipotle, cumin and oregano.
The recipe is designed for two people and can be made in an air fryer or a conventional oven. It's a great option for a smaller roast dinner when you want something a little different from the usual accompaniments.
Serve with rice, quinoa or warm flatbread to soak up the rich chipotle bean sauce. Any leftovers can be sliced and enjoyed in wraps or sandwiches the next day.
Ingredients
- For the beef:
- 1 small beef joint (about 500g)
- 1 Tbsp olive oil
- 1 Tbsp chipotle paste
- 1 Tbsp tomato purée
- ½ tsp dried oregano
- Juice of ½ lime
- Salt and freshly ground black pepper
- For the chipotle beans:
- 1 red onion, chopped
- 1 red pepper, chopped
- 1 garlic clove, chopped
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 x 400g tin cherry tomatoes
- 1 x 400g tin black beans, drained and rinsed
- ½ small tin sweetcorn, drained (optional)
- Salt and freshly ground black pepper
- Fresh coriander, to serve
Instructions
- Rub the beef joint all over with olive oil and season with salt and pepper.
- Heat a heavy-based frying pan over a medium-high heat and sear the beef on all sides until browned.
- Transfer the beef to a plate and leave it to rest.
- Once the beef has cooled slightly, mix together the chipotle paste, tomato purée, lime juice and oregano. Spread this mixture all over the beef, reserving any leftover marinade.
- Leave the beef to marinate for at least 30 minutes.
- Meanwhile, prepare the bean sauce. Heat a little oil in the same pan and cook the onion for about 5 minutes until softened.
- Add the red pepper and garlic and cook for another minute.
- Stir in the cumin and oregano, then add the cherry tomatoes. Simmer for about 8 minutes.
- Add the black beans and sweetcorn, if using. Season with salt and pepper, then set aside.
- Transfer the bean mixture to an air fryer-safe dish and place the marinated beef joint on top.
- Cook at 180°C for 30–45 minutes, depending on how well done you prefer your beef. Rest the beef for a few minutes before slicing.
- Oven Method: Transfer the bean stew to a small roasting dish and place the beef joint on top. Roast in a preheated oven at 180°C for 30–45 minutes, depending on your preferred level of doneness.
- Rest the beef before carving and serve with the chipotle beans and rice, quinoa or warm flatbread. Scatter fresh coriander over the top.
