Potato & Cabbage Soup
Background
This Potato & Cabbage Soup also has Leek, Carrot, Onion & Garlic - but they wouldn't all fit in the title. The main thing is that it's quick, easy, healthy, warming and tasty! Just the thing for supper on a chilly evening with some chunky fresh bread. I make it using the pressure cooker; a normal pan will take about 25 minutes longer and need about 250 ml more water.
Ingredients
- 1 Tbsp Olive oil
- 150g Leeks
- 200g Onions
- 6g Garlic
- 350g Potatoes
- 300g Cabbage (e.g. Savoy)
- 250g Carrots
- 1Β½ tsp mixed herbs
- 1ΒΌ litre chicken stock
Instructions
- Heat the olive oil in the pan. Thinly slice the leek and onion, crush & slice the garlic and add to the pan.
- Thinly slice all the other vegetables and stir into the softened mixture in the pan.
- Add the herbs, stir then pour in the stock.
- Put on the lid and bring up to pressure. Cook on a low flame for 10 minutes then allow to cool by itself.
