Prawns and red pepper stir-fry

Background
A stir-fry is quick & easy meal for a midweek supper and it's quite healthy too! This prawn and red pepper stir-fry is ready in just ten minutes! Serve it with noodles or rice.
Ingredients
- 1 courgette
- 2 spring onions
- 1 red bell pepper
- 1 yellow bellpper
- 1 inch ginger, grated
- 2 garlic cloves, grated
- 1 chilli
- 1 tbps soy sauce
- 150g raw prawns (shelled)
- 1 Tbsp groundnut oil
- 1 toasted sesame oil
- 1 lime
- sesame seed to serve
Instructions
- Using a spiralizer or julienne peeler cut the courgette into noodle shapes and set aside.
- Cut the pepper into small pieces and slice the spring onions diagonally.
- Grate the ginger and garlic.
- Heat a wok. When it's piping hot, add the groundnut oil and stir-fry the spring onion for about 30 second. Add the pepper and stir for 2 minutes, then add the ginger, chilli and garlic.
- Stir fry for a couple of minutes, until the peppers are tender then fold in the courgette and prawns and cook for 3 minutes until they are just cooked through.
- Serve immediately with the fresh lime juice and some sesame seeds sprinkled on top.
