Quorn pieces in tomato sauce

Background
For vegetarians and vegans Quorn is an important sauce. Itβs made from mycoprotein, providing nine essential amino acids. Itβs also high in fiber, vitamins and minerals, yet low in saturated fat. Quorn pieces look like diced chicken and can be used the same way - for stews, stir-fry, ragu, salad and so on. The vegetarian version contains egg-white, so if youβre vegan, make sure you buy the correct product. These Quorn pieces in tomato sauce is an easy, healthy recipe -Β you can serve it with rice, pasta, baked potatoes or on toast.
Ingredients
- 1 pack Quorn pieces ( 300g)
- 1 onion
- 2 celery sticks
- 2 cloves of garlic
- 2 carrots
- 1 Tbsp olive oil
- 1 Tbsp tomato purΓ©e
- 1 tsp Italian dried herbs
- 1 tin plum tomatoes
- 1 vegetable stock cube
- 1 bay leaf
- 100g green peas or spinach/kale
- 100g green beans or broad beans
- Chopped fresh herbs to serve (parsley, coriander or basil)
Instructions
- Cut the onion, celery, carrot and garlic into tiny pieces.
- In a large pan, heat the olive oil and gently soften the chopped vegetables.
- Add the herbs, stir for a few seconds, then add the tomato purΓ©e and bay leaf and stir again.
- Add the tinned tomatoes, then one and a half tin of water. Add the stock cube and bring to the boil.
- Cook for 20 minutes, then remove the bay leaf. Using a stick blender, process the stew until you get a thick, textured sauce.
- Add the Quorn pieces and cook for 10 minutes, then add your chosen green vegetables and cook for another 5 minutes or so.
- Serve with fresh herbs scattered on top.
