Quorn pieces in tomato sauce
Background
For vegetarians and vegans Quorn is an important sauce. It’s made from mycoprotein, providing nine essential amino acids. It’s also high in fiber, vitamins and minerals, yet low in saturated fat. Quorn pieces look like diced chicken and can be used the same way - for stews, stir-fry, ragu, salad and so on. The vegetarian version contains egg-white, so if you’re vegan, make sure you buy the correct product. These Quorn pieces in tomato sauce is an easy, healthy recipe - you can serve it with rice, pasta, baked potatoes or on toast.

- 1 pack Quorn pieces ( 300g)
- 1 onion
- 2 celery sticks
- 2 cloves of garlic
- 2 carrots

- 1 tin plum tomatoes
- 1 vegetable stock cube
- 1 bay leaf
- 100g green peas or spinach/kale
- 100g green beans or broad beans
- Chopped fresh herbs to serve (parsley, coriander or basil)
Instructions
- Cut the onion, celery, carrot and garlic into tiny pieces.
- In a large pan, heat the olive oil and gently soften the chopped vegetables.
