Raspberry and chocolate oat bars

Background
These raspberry and chocolate oat bars are vegan, gluten-free and sugar-free. They are yummy and thanks to the bananas, vanilla and raspberries, they are surprisingly sweet, but do add some sugar or date syrup if you have a sweet tooth! They are perfect for breakfast, afternoon tea and snacking during the day.
Ingredients
- 2 large or 3 small ripe bananas
- 1 cup rolled oats (gluten-free, if needed)
- 1 tsp vanilla essence
- 2 Tbsp cocoa powder
- Β½ cup ground almond or 2 Tbsp vegetable oil
- 1 apple, grated
- 1 cup fresh or defrosted raspberries
Instructions
- Preheat the oven to 180Β°C. Grease and line a shallow, about 20x30 cm, baking dish.
- Using a fork, mash the bananas, then mix in the oil, vanilla essence and oil.
- Add the oats, cocoa, grated apple and ground almonds (if used), then combine well.
- Add the raspberries and mix well.
- Transfer the mixture to the prepared dish, spreading it out evenly.
- Bake for 20-25 minutes until golden.
- Let it cool, then cut it up into slices or squares.
