Roasted parsnip with honey and goat's cheese

Background
I normally serve this roasted parsnips with honey and goats cheese as a side dish with roasted lamb or chicken. Itβs easy to make, gluten-free and vegetarian, so fits in many diets.
Ingredients
- 3 medium parsnips
- 1 tsp oregano
- 1 Tbsp Olive oil
- Salt & pepper
- 1 tsp honey
- 3 Tbsp grated hard goatβs cheese
Instructions
- Peel the parsnips, then cut them into long batons. Scatter them into a baking dish.
- Sprinkle oregano, salt and pepper on top, then drizzle with olive oil.
- Bake in a hot oven (set to about 180Β°C) for about 15-20 minutes, until golden.
- Turn them over, add the honey and bake for another 5 minutes.
- Scatter the grated cheese on top and bake for 5 more minutes or until then cheese has melted.
- Serve warm.
