Roasted parsnip with honey and goat’s cheese

Background

I normally serve this roasted parsnips with honey and goats cheese as a side dish with roasted lamb or chicken. It’s easy to make, gluten-free and vegetarian, so fits in many diets.

Ingredients

3 medium parsnips
1 tsp oregano
1 Tbsp Olive oil
Salt & pepper
1 tsp honey
3 Tbsp grated hard goat’s cheese

Instructions

Peel the parsnips, then cut them into long batons. Scatter them into a baking dish.
Sprinkle oregano, salt and pepper on top, then drizzle with olive oil.
Bake in a hot oven (set to about 180°C) for about 15-20 minutes, until golden.
Turn them over, add the honey and bake for another 5 minutes.
Scatter the grated cheese on top and bake for 5 more minutes or until then cheese has melted.
Serve warm.
