Samphire with lemon and garlic

Background
Samphire is a sea vegetable that has a crisp texture and actually tastes of the sea so it goes very well with fish and shellfish. This Samphire with lemon and garlic recipe is very easy to make and can be served warm or at room temperature. I like to have it with grilled fish.
Ingredients
- 1 head of garlic
- 120g Samphire (approx)
- 1 Tbsp olive oil (or a knob of butter)
- ½ lemon (zest & juice)
- chilli flakes (optional)
Instructions
- Put the garlic in the oven and bake for 10 minutes until tender (or cook it in boiling water). Let it cool, then peel carefully and take the cloves out of their skin.
- Blanch the samphire in boiling water for 2 minutes then drain.
- Heat the oil in a frying pan and cook the garlic cloves until golden brown (add the chilli flakes too if used).
- Add the samphire, stir then add most of the lemon juice and zest. Stir for a couple of minutes. Season to taste.
- Serve with the remaining lemon juice and zest.
