Sauteed green peas with vegan feta

Background
This delicate sautéed green peas with vegan feta is one my favourite dishes throughout the year. It’s super easy to make, zingy and yummy. I normally serve it on a piece of toast or crostini ( lightly crushed into a textured spread), but you can mix it with pasta, rice, gnocchi or serve it as a side dish with grilled fish.
Ingredients
- 2 cloves of garlic
- 1 Tbsp olive oil
- 2 cups frozen green peas
- Juice and zest of 1 lemon
- Drop of white wine ( optional)
- 50g vegan feta cheese
- 1 Tbsp chopped dill
- Salt and pepper
Instructions
- Thinly slice the garlic.
- Heat the oil in a saucepan, then add the garlic. Cook for 30 seconds, then add the peas, lemon juice and a dash of water or white wine/vermouth. Put the lid on and simmer for 5 minutes or until the peas are cooked.
- Turn off the heat and transfer the peas into a serving bowl. Add the dill and crumble the feta over it, then combine. Season with salt & pepper.
- Serve with a pinch of lemon zest scattered on the top.
