Sauteed Shiitake with broad beans

Background
This sauteed Shiitake with broad beans is on the table within 15 minutes. You can serve it with noodles, rice or pasta as a vegan meal. Alternatively it’s a nice side dish that goes well with grilled fish or meat.
Ingredients
- 1 baby leek or 5 spring onions
- 1 pack Shiitake (about 120g)
- 1 full cup broad beans
- 1 Tbsp oil
- 1 Tbsp soy sauce
- 1 Tbsp rice wine
- 1 tsp rice wine vinegar
- 1 Tbsp miso paste
- 1 tsp sesame oil
- 1 lime, juiced
- 1 Tbsp sesame seeds
- 1 Tbsp chopped coriander leaves
Instructions
- Finely slice the leek or spring onion.
- Cut the mushrooms into bite-sized pieces.
- Heat the oil in large frying pan and gently sauté the leek. Add the shiitake and put a lid on. Turn the heat down.
- After ¾ minutes, add the broad beans, soy sauce, rice wine, vinegar and miso paste. Combine and cook for 5 minutes under cover.
- When the vegetables are tender, add the sesame oil, sesame seeds and coriander leaves. Stir for a minute, then serve.
