Sesame Peas and Kale
Background
This sesame peas and kale is a quick, fresh side dish with simple Japanese-inspired flavours. It comes together in just 5 minutes, making it ideal when you need something fast and full of flavour. It works well with teriyaki chicken, grilled fish, or other simple mains. You can serve it warm or at room temperature. It also makes a great addition to a bento box or packed lunch.
Ingredients
- 2 large handfuls of chopped kale
- 1 cup green peas
- 1 Tbsp soy sauce
- 1 tsp mirin
- 1 tsp rice vinegar
- 1 garlic clove, minced (optional)
- 1 tsp sesame oil
- 2 tsp sesame seeds
- 1 spring onion, chopped (optional)
Instructions
- Steam the kale and peas over boiling water for about 5 minutes, until tender but still bright.
- Meanwhile, mix the soy sauce, mirin, rice vinegar, sesame oil, and garlic (if using) in a small bowl.
- Taste and adjust the dressing if needed.
- Transfer the steamed vegetables to a serving bowl and pour over the dressing.
- Toss well to coat.
- Finish with sesame seeds and spring onion.
- Serve warm or at room temperature as a side dish.
