Shiitake and green beans with tofu

Background
This shiitake and green beans with tofu is a lovely Japanese-style vegan meal, served with noodles or rice. Alternatively, you can serve it as a side dish β it Β goes well with beef and fish.
Ingredients
- 125g shiitake mushrooms
- 100g green beans
- 1 small red onion
- Β½ red pepper (or 1 red chilli pepper, deseeded)
- 1 clove of garlic
- 1 Tbsp oil
- 2 Tbsp Kikkoman soy sauce
- 1 tsp rice vinegar
- 2 tsp Mirin
- 50g tofu
- 1 tsp Sesame seeds
- 1 small nori sheet, torn
Instructions
- Thinly slice the mushrooms, garlic and onion. Dice the red pepper or chilli.
- Heat the oil in a frying pan or wok over medium heat. Add the onion and stir-fry for a couple of minutes. Add the garlic, mushroom & red pepper, then cover. Turn down the heat and sautΓ© for 5 minutes until the mushrooms have released some liquid.
- Add the soy sauce, mirin, rice vinegar and beans, put the lid on and sautΓ© for another 3-5 minutes over low heat until the vegetables are tender. Taste, and adjust to your liking.
- Crumble the tofu on top and stir-fry for a minute.
- Serve with the sesame seeds & nori scattered on top.
