Shiitake and sesame salad

Background
This Japanese-style vegan shiitake and sesame salad is very easy to make- yummy, filling and super healthy. Itβs particularly good for those who are on a menopause diet. Β Serve it with rice crackers or wholesome flatbread if you like.
Ingredients
- 50g shiitake mushrooms
- 1 Tbsp vegetable oil
- 1 Tbsp Kikkoman Tamari soy sauce
- 1 tsp Mirin
- 2 Tbsp sesame seeds
- 2 handful mixed salad leaves
- 1 handful radish (purple or red)
- 2 spring onions
- 1 Tbsp sesame oil
- 2 tsp rice vinegar
Instructions
- Thinly slice the mushroom. Heat the oil in a wok or frying pan, add the mushrooms and cook for a couple of minutes. Add the half of the sesame seeds, let them spatter, then then add the soy and mirin. Let the sauce bubble to reduce.
- Meanwhile, finely slice the onions and radishes. Scatter the mixed leaves onto two plates.
- The mushrooms should be cooked by now and slightly sticky. Add them to the salad leaves, then arrange the radish and onion pieces on top.
- Drizzle with the sesame oil and vinegar, then scatter the remaining sesame seeds all over the salad.
- Serve warm or at room temperature.
