Slow-roasted pork with spiced apple

Background
This slow-roasted pork with spiced apple is perfect for lazy weekends. Just let it roast it in the oven for a couple of hours and youβll get some yummy succulent pork. Serve it with mashed potatoes and roasted veggies. Donβt forget the gravy and the roasted apples!
Ingredients
- 1 pork joint, about 1.5kg
- 3 apples
- 2 cloves of garlic
- 1 glass white wine
- Β½ lemon , juiced
- 1 tsp ginger
- 1 star anises
- 1 handful cloves
- 1 tsp cinnamon
- 1 onion
- Salt and pepper
- Honey
Instructions
- Preheat the oven to 160Β°C.
- Juice or blend two apples (or use apple smoothie). Pour this into a jar. Add the lemon juice, ginger and cinnamon.
- Put the meat in a roasting tray, then brush it all over with this mixture.
- Pour any remaining mixture into the tray and add the wine.
- Cut the onion into wedges and put it in the tray together with the garlic and star anis.
- Push some cloves into the fat & meat, then scatter the rest into the tray.
- Season with salt and pepper, then cover the tray with foil.
- Put the tray in the oven and slaw-roast for 2 hours.
- Take off the foil.
- Baste the pork with the cooking juice.
- Cut the remaining apple into wedges and brush them with a little honey. Put them around the pork.
- You can brush the pork skin with some honey, if you want some crackling.
- Turn the heat up to 200C and brown the skin and apples. This should take about 15 minutes.
- Transfer the meat and apples to a plate, cover and rest.
- Make some gravy from the cooking jus.
- Carve the pork and serve with your chosen side dishes, the spiced apples and the gravy.
