Spanish seafood pasta with chorizo

Background
If you like Spanish food you'll love this dish! It's a Spanish seafood pasta made with chorizo and roasted peppers and it's fantastically flavoursome. Instead of green peas you can use green beans, broad beans, asparagus or even tinned chickpeas or beans. It takes 15-20 minutes to cook - even quicker if you use gluten-free pasta (made of chickpeas or brown rice). So it's an ideal meal on busy or lazy days.
Ingredients
- 400g dried pasta
- 1 chicken stock cube (or 2 tsp bouillon powder)
- 1 tsp turmeric (or a pinch of saffron)
- 100g cooking chorizo
- 2 grilled/roasted peppers, from a jar
- 200g mixed seafood (ready to cook)
- 100g green peas
- I handful of parsley, chopped
Instructions
- Cook the pasta according to packaging instructions, adding the stock cube/powder and half of the turmeric to the cooking water.
- Meanwhile, slice the chorizo and fry in a pan until crisp.
- Cut the pepper into thin slices, add these to the pan together with the seafood and peas. Add the turmeric, stir through, then spoon some cooking water of the pasta to the mixture. Cook for 2-3 minutes.
- Drain pasta, put it back into the pan and toss with the seafood mixture and parsley. Add more cooking water if needed - the pasta should be moist but no too saucy.
- Season with salt and pepper and garnish with parsley.
Tips
- If you have any leftover grilled or roasted bell peppers - use one up for this recipe, just don't forget to peel it!
- To spice it up use spicy chorizo or add half a teaspoon of dried chilli to the cooking.
