Background
This spiced carrot salad with raisins goes really well with grilled lamb and chicken - alternatively you can mix it with couscous for a vegan dish. Itβs best to make it ahead, even a day before, to allow the flavours to merge well. This salad is perfect for summer garden parties, picnic, barbecues and so on.
Ingredients
- 2 cups grated or shredded carrots
- Β½ cup raisins
- 2 Tbsp apple cider vinegar
- 3 Tbsp olive oil
- 1 Tbsp honey or date syrup
- Β½ tsp cumin powder
- Pinch of cinnamon
- Pinch of chilli flakes
- 1 tsp chopped or grated ginger
- Salt and pepper, to taste
- 2 Tbsp chopped Parsley
- Sunflower seeds to serve, optional
Instructions
- Put the carrots and raisins in a bowl.
- In another bowl, mix all other ingredients, except the parsley. Taste it and adjust it to your liking.
- Pour the dressing over the carrots and raisins, and mix well.
- Put a cover on and rest for at lest 30 minutes before serving.
- Just before serving, add the chopped parsley and combine.
- Serve with some sunflower seeds scattered on top.
