Ingredients: 2 cups grated or shredded carrots; ½ cup raisins; 2 Tbsp apple cider vinegar; 3 Tbsp olive oil; 1 Tbsp honey or date syrup; ½ tsp cumin powder; Pinch of cinnamon; Pinch of chilli flakes; 1 tsp chopped or grated ginger; Salt and pepper, to taste; 2 Tbsp chopped Parsley; Sunflower seeds to serve, optional

Background

This spiced carrot salad with raisins goes really well with grilled lamb and chicken - alternatively you can mix it with couscous for a vegan dish. It’s best to make it ahead, even a day before, to allow the flavours to merge well. This salad is perfect for summer garden parties, picnic, barbecues and so on.

Ingredients

2 cups grated or shredded carrots
½ cup raisins
2 Tbsp apple cider vinegar
3 Tbsp olive oil
1 Tbsp honey or date syrup
½ tsp cumin powder
Pinch of cinnamon
Pinch of chilli flakes
1 tsp chopped or grated ginger
Salt and pepper, to taste
2 Tbsp chopped Parsley
Sunflower seeds to serve, optional

Instructions

Put the carrots and raisins in a bowl.
In another bowl, mix all other ingredients, except the parsley. Taste it and adjust it to your liking.
Pour the dressing over the carrots and raisins, and mix well.
Put a cover on and rest for at lest 30 minutes before serving.
Just before serving, add the chopped parsley and combine.
Serve with some sunflower seeds scattered on top.
