Background

This easy spiced carrot soup is a zingy version which is super healthy too. You can make with chicken or vegetable broth - both versions are delicious. Serve it with flatbread or wholesome rolls.

Ingredients

2 Tbsp oil
1 red onion
2 sticks of celery
1 kg carrots
2 cloves garlic, minced
1inch fresh ginger, grated
1 Tbsp ground cumin
1 litre of stock (vegetable or chicken)

Instructions

Chop the onions and celery finely, then dice the carrots.
Heat the oil, add the chopped vegetables, fry them gently until softened.
Add the garlic, ginger and cumin. Stir for a minute, then pour in the stock.
Bring to the boil, cover and cook on low temperature for 15-20 minutes, until the carrots are tender.
According to your preference, blend the soup roughly or until smooth. Season to taste.
Serve with a dollop of natural youghurt or raita if you like.
