Spiced carrot soup

Background
This easy spiced carrot soup is a zingy version which is super healthy too. You can make with chicken or vegetable broth - both versions are delicious. Serve it with flatbread or wholesome rolls.
Ingredients
- 2 Tbsp oil
- 1 red onion
- 2 sticks of celery
- 1 kg carrots
- 2 cloves garlic, minced
- 1inch fresh ginger, grated
- 1 Tbsp ground cumin
- 1 litre of stock (vegetable or chicken)
Instructions
- Chop the onions and celery finely, then dice the carrots.
- Heat the oil, add the chopped vegetables, fry them gently until softened.
- Add the garlic, ginger and cumin. Stir for a minute, then pour in the stock.
- Bring to the boil, cover and cook on low temperature for 15-20 minutes, until the carrots are tender.
- According to your preference, blend the soup roughly or until smooth. Season to taste.
- Serve with a dollop of natural youghurt or raita if you like.
