Spiced chicken bake
Background
This super easy spiced chicken bake is a wonderful dish during the winter holidays, as it smells and tastes really festive! It's perfect for a no-fuss family meal - everything is cooked in one tray in the oven, so you can get on with other tasks. Also, the vegetables can vary, just use whatever's suitable in your larder so e.g. swede, fennel, beet, bell pepper, turnip would all work well too!
Ingredients
- 8 chicken drumsticks &/or thighs
- 1 large red onion
- 4 cloves of garlic
- Root vegetables: 1 parsnip, 2 sweet potatoes, several new potatoes
- 1 handful of cherry tomatoes
- ½ tsp ground cumin
- ½ tsp ground cinnamon
- ½ tsp ground paprika
- ¼ tsp ground ginger
- 1 tsp cloves
- 2 Tbsp olive oil
- Maple syrup or honey
Instructions
- Turn the oven to 200°C.
- Put the chicken pieces in a large baking tray. Cut the root vegetables into 5 cm cm pieces, the onion into wedges. Arrange these around the chicken.
- Peel the garlic cloves, cut them into wedges. Put some under the skin of the chicken pieces and scatter the rest around.
- Mix the ground spices with the oil, then brush it over the chicken and veggies. Season to taste and scatter around the cloves. Cut the lemon into wedges. Squeeze the juice over the chicken, then place the wedges around them.
- Put the tray in the oven and bake for about 20 minutes.
- Take the tray out of the oven and turn down the heat to 180°C. Turn the chicken pieces and vegetables around, brush with the leftover oil and/or baste with the juices. Add the tomatoes.
- Put the tray back into the oven, and cook for another 20 minutes, then turn the chicken/veggies around again. Drizzle some maple syrup or honey over the chicken, using the brush to spread it evenly, then bake for another 10 minutes or so until golden brown.
Tips
If you'd like your food a bit spicy, just add a couple of pinches of chilli flakes or cayenne to the oil & ground spices!Categories
