Background
This spiced chickpeas and carrot salad is ready in just 5 minutes. Serve in flatbread, or part of a mezze or as a side dish with grilled labΒ & chicken. Itβs also ideal for your lunchbox, or picnics, trips and parties.
Ingredients
- 1 tin chickpeas, drained
- 2 cloves of garlic, minced
- 1 tsp black cumin
- 1 celery stick
- 1 carrot, grated
- Β½ tsp smoked paprika
- 1 Tbsp olive oil
- 2 tsp cider vinegar or 2 Tbsp lemon juice
Instructions
- Drain the chickpeas and scatter them into a mixing bowl.
- Thinly slice the celery and add to the chickpeas. Chop the leaves of the celery and set aside.
- Mince the garlic and add to the chickpeas.
- Grate the carrot and to the chickpeas.
- Season to taste, then add the black cumin seeds, oil and vinegar.
- Toss well then transfer the salad to a serving bowl.
- Dust with the paprika and garnish with the celery leaves.
