Spiced Fennel & Courgette Soup

Background
If you're after something really tasty, yet very quick and easy to make, then you should try out thisΒ Spiced Fennel & Courgette Soup. On top of being delicious and satisfying, if cooked as below, it works out at a remarkable 55 kCal per portion!
Ingredients
- 10g Olive Oil Spray (10 kCal)
- 1 Large Onion (70 kCal)
- 2 tsp Mild Curry Powder (16 kCal)
- 250g Fennel (30 kCal)
- 450g Courgette (77 kCal)
- 1 litre Vegetable Stock (40 kCal)
- Seasoning
Instructions
- Peel & chop the onion.
- Wash the fennel bulbs and courgettes, then dice quite finely, keeping the feathery green bits at the top of the fennel to garnish when serving.
- Spray the oil into a heavy based saucepan or casserole over a medium heat. Fry the onion until softened. Stir in the curry powder.
- Add the fennel and courgette and cook for a couple minutes, stirring. Add the stock, bring to a simmer then cover and cook for 10-12 minutes over a low heat.
- Use a hand blender to smooth the soup and season to taste freshly ground salt and pepper.
Tips
