Spiced green pea and sweet potato soup

Background
This vegan spiced green pea and sweet potato soup is perfect on cool Summer evenings. Itβs zesty, a bit spicy and actually quite filling! Serve it with flatbread or vegan scones.
Ingredients
- 1 onion
- 2 cloves of garlic
- 1 medium carrot
- 1 large sweet potato
- 1 pinch of ground Cumin
- 1 pinch of dried oregano
- 1 pinch of chilli flakes
- 750 ml vegetable stock
- 500g of green peas
- 1 cup of shredded kale, Cavolo nero or Savoy cabbage
- 2 Tbsp chopped mint leaves
- Juice of half a lime or lemon
Instructions
- Finely chop the onions and garlic.
- Dice the carrot and sweet potato into 1 cm small cubes.
- Heat one Tbsp of oil in a heavy-based saucepan and gently sautΓ© the onion for about five minutes, then add the garlic, chopped carrot and sweet potato. Add one pinch of cumin, dried oregano and chilli flakes, then stir for 30 seconds.
- Put a lid on and cook gently for another five minutes. Add the vegetable stock and bring to the boil. Cook for five minutes, then add the peas and the sliced kale or cabbage. Bring to the boil again, and cook for another five minutes or so.
- Turn off the heat and stir in the mint and lemon juice, then serve.
