Spiced roasted butternut squash
Background
You can't go through the winter without making some roasted butternut squash! It's not only healthy, warming and tasty but can be used up in many different ways - as snacks, side dish, main dish or for making soups, pasta, pancakes, dips and so on. This spiced roasted butternut squash is a basic, simple recipe - the result is a wonderful snack or base for other dishes.
Ingredients
- 2 Tbsp olive oil
- 2 tsp chopped oregano (or 1tsp dried oregano)
- ¼ tsp curry powder
- ¼ tsp turmeric
- 400g butternut squash (approx.)
Instructions
- Peel the squash, remove the seeds and fibrous part and slice it into thin strips. Mix the oil with the spices then brush the slices.
- Place them in a roasting dish and bake for 15-20 minutes until soft - turning over once.
- Serve warm or at room temperature.
