Spiced yogurt coated chicken thighs

Background
These zingy, spiced yogurt coated chicken thighs are perfect for a weekend BBQ. They can be prepared hours ahead so, if you have guests around, you can concentrate on them rather than the food! Serve with flatbread and various salads.
Ingredients
- 4 chicken thighs
- 4 Tbsp Greek yogurt
- ½ tsp ground cumin
- ½ tsp ground coriander
- 2 cloves garlic
- 3 cm piece ginger (peeled)
- zest and juice of half lime
- 1 green chilli
- 1 Tbsp ground almonds
- 1 handful of coriander leaves
Instructions
- Remove the seeds and veins of the chilli and chop up the flesh. Grate the ginger and the zest of the lime, then squeeze in its juice. Mince the garlic and finely chop the coriander.
- Mix all of these with the yogurt, spices and the ground almond, then rub the mixture into the chicken. Make sure the thighs are well covered, then chill them for at least two hours if you can.
- Take the chicken out of the fridge 30 minutes before cooking.
- Heat the BBQ or griddle pan. Cook on low temperature until lightly charred but make sure they are cooked through!
- Serve with lime wedges.
